Oklahoma State University's Department of Nutritional Sciences assistant professor Jill Joyce and department head Stephen Clarke have teamed up to produce Health Headlines: Unpeeled, a podcast tackling some of nutrition’s tastiest topics.

Joyce said daily calls home with her mom, also a scientist, about health headlines inspired her to start this podcast. Nutrition is always in the headlines somewhere on TV, social media, news websites and more. It can be very overwhelming for people.

“I cannot slow down or control the overwhelming nature of today’s information world, so I came up with a different solution. Join them and be a voice of clarity and effective translation of science into user-friendly messages,” Joyce said.

Clarke said he and Joyce are excited to help listeners better understand nutrition and the role it plays in achieving optimal health while also contributing to the college’s land-grant mission for extension and outreach.

“Our ‘why’ is to empower others to make informed nutrition and health decisions so that they can lead a satisfying and productive life. We believe strongly in the power of nutrition to change and improve lives,” Clarke said.

Unpeeled has also welcomed nutritional sciences graduate students Jamie Baham, Katherine Bode and Kennedy Robinson as guests on the podcast. Clarke praised the graduate students and their developing ability to communicate the science behind the headlines.

The first five episodes have covered a variety of topics, including sports nutrition and healthy weight gain, dietary protein supplementation and COVID-19 recovery and how childhood diet impacts long-term health impacts.

“I hope this podcast changes some worlds, through sound nutrition and health messages, and that our passion for it is contagious,” Joyce said.
